One-pot lasagna

Oh, boy, do I have a delicious treat for all you pasta and casserole lovers! I made this earlier in the week and it was to-die-for delicious! Billy and I both went back for more helpings, and were thrilled with the way it turned out. Billy's request for the next time I make it: more mushrooms and add Italian sausage. I think I can accommodate that! 

I kept to the recipe for the most part, but I skinnied it up a bit with some low fat and fat free options. I am sure there is more that can be changed, but I was super happy with the end result this way. I made this recipe easier to follow by prepping all of my ingredients while the water boiled and the noodles cooked. It was quite simple to prepare, and will definitely become a staple at my house, even though it's rich and not super skinny calorie wise. 

Easy One-Pot Lasagna
adapted from this recipe

12oz noodles {I used lasagna, but it will work with any long noodle really}
1 1/2 tbsp unsalted butter
1 1/2 tbsp flour
1 cup fat free milk
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano
1 cup fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, slightly beaten
1 cup marinara sauce
1 cup spinach
1/2 cup mushrooms, diced
1 cup shredded reduced fat mozzarella

Directions:
1. Preheat oven to 350*. In a large pot, cook noodles according to package directions. Drain into a colander. In the same pot, melt butter over medium-low heat. Stir in the flour to form a paste. 
2. Gradually stir in the milk, until mixture thickens. Stir in the salt, pepper, and oregano. Stir in the ricotta cheese, Parmesan cheese, and egg. Stir in the cooked noodles, tossing to coat. Remove from heat.
3. Spray an 8x8 inch dish with cooking spray. Spoon in the noodle mixture. Bake for 10 minutes.
4. Remove from oven. Spread the marinara sauce over noodle layer. Add spinach, then mushrooms, and top with mozzarella cheese. Return to oven and bake an additional 20 minutes or until cheese melts and casserole is set. Remove from oven and let sit for 5 minutes before serving.

  1. Ummm yum! BF would love me forever if I made this. Well I guess he does already (after 2.5+ yrs...); but id get major brownie pts! ;)
